Description
Koki corn is a steamed pudding made from ground corn, palm oil, and spices. It's a popular Cameroonian dish that can be eaten as a main course or snack.
Ingredients
- 4 cups corn kernels (fresh or frozen)
- 1/2 cup palm oil
- 2 onions, chopped
- 2 hot peppers, chopped
- 1 tablespoon salt
- 2 Maggi cubes
- Banana leaves or aluminum foil for wrapping
Instructions

Blend corn kernels with a little water until smooth but slightly coarse.

Add chopped onions, peppers, palm oil, salt, and Maggi cubes to the corn mixture.

Mix thoroughly until well combined.

Prepare banana leaves by washing and softening over flame.

Scoop mixture into banana leaves or foil and wrap tightly.

Steam the wrapped koki for 45 minutes.

Unwrap and serve hot or cold.
Cooking Tips
- • Don't blend corn too smooth - some texture is good
- • Can add crayfish for extra flavor
- • Serve with fried plantains
