Description
Achu soup, also known as yellow soup, is a traditional dish from the Northwest region of Cameroon. It's characterized by its bright yellow color from palm oil and limestone, served with pounded cocoyam.
Ingredients
- 500g beef or goat meat
- 1 cup palm oil
- 2 tablespoons kanwa (limestone)
- 100g crayfish
- 3 onions, chopped
- 4 cloves garlic
- 2 tablespoons ground country onions
- Salt to taste
- Maggi cubes
- Water
Instructions

Season and cook meat until very tender.

Blend onions, garlic, and crayfish into a paste.

Mix kanwa with a little water and strain.

Heat palm oil in a pot until very hot.

Add the kanwa water slowly to the hot oil (it will turn yellow).

Add the blended paste and stir well.

Add the cooked meat and its stock.

Simmer for 20 minutes, stirring occasionally.

Serve with achu (pounded cocoyam).
Cooking Tips
- • Be careful when adding kanwa to hot oil as it splatters
- • The soup should be thick and yellow
- • Adjust kanwa amount for desired color
