Description
Eru is a traditional Cameroonian dish made with finely shredded eru leaves and waterleaf, cooked with palm oil and various proteins. It's a beloved delicacy especially popular in the Southwest region.
Ingredients
- 300g eru leaves, finely shredded
- 200g waterleaf, chopped
- 500g assorted meat (beef, tripe)
- 200g stockfish
- 100g crayfish
- 3 tablespoons palm oil
- 2 onions, sliced
- Salt to taste
- Maggi cubes
- 2 cups water
Instructions

Soak stockfish in water for 2 hours, then cook until tender.

Cook assorted meat with seasonings until tender.

In a large pot, add palm oil and sliced onions.

Add the eru leaves and waterleaf, stirring gently.

Add the cooked meat, stockfish, and crayfish.

Add water and let it simmer for 30 minutes on low heat.

Season with salt and Maggi cubes.

Serve hot with garri, fufu, or plantains.
Cooking Tips
- • Do not over-stir to keep the eru leaves intact
- • Add more palm oil for authentic flavor
- • Can be made vegetarian by omitting meat
